I found out through test results that I was gluten-intolerant, and wanted guidance along the way to re-structure my life. I checked out her website and thought she would be perfect to work with, and I was correct! The biggest challenge I came across while changing my eating habits was realizing that gluten was not the only issue. I had noticed other foods were bothering me once my system started to become cleaner, and learning to work around a combination of foods was a bit time consuming.
What I loved most about Ali (and still do!) was that she not only was a health counselor in terms of food, but a health counselor in terms of whole body healing. She was great to talk problems and issues out with, as most of us know that emotional well-being is a key factor in having a balanced, happy, healthy life. For me, having a happy stomach makes for a happy life.
A friend who had worked with Ali referred her to me. Working with Ali was like talking with my best girlfriend. I loved her enthusiasm, her wealth of knowledge and felt comfortable sharing anything. As a result of our work together, I am both gluten and dairy-free which directly resulted in eliminating my migraines, need for allergy medicine and my skin has cleared up a great deal. Because I’m feeling better, I am enjoying my life much more. No more nights on the couch suffering from migraines.

When I first met with Ali, it was an emergency situation. At 26, my cholesterol was over 280 points, my triglycerides were out of control, and I was 40 pounds overweight. I had stomach problems, migraines, and a variety of other issues. I had seen doctor after doctor, but none could give me an explanation or relief.
When you have a gluten sensitivity or Celiac disease, dining out can often be a game of Russian roulette you’d rather leave to the Russians. But in the spirit of Quakerism, it looks like Philly restaurants are becoming more tolerant and inclusive for those of us trying to keep our intestines happy. Happy intestines = clear focus, great moods, flat stomach, feeling optimistic, strong immunity and then of course, no itchy skin, no headaches, no obsessive thoughts, no GERD, the list can go on.
Here’s another delicious recipe from the Gluten-Free, Sugar-Free Cookbook by Susan O’Brien. I made this last weekend and plan on whenever I’m craving something sweet with some crunch. It is delicious! And to make this recipe easy, use whatever fruit you have in the house. That’s what I did. It all worked out!
Ingredients:
Fruit
4 cups apples, peeled,cored and slice
5 cups strawberries, fresh or frozen
3 cups raspberries, fresh or frozen
1/2 tsp cinnamon
1/4 tsp nutmeg
2 T arrowroot (you can use cornstarch too)
These muffins are Fabulous! They go great with winter soups and the chili recipe I posted last week. And they don’t come out crumbly like many gluten-free baking goods. I always make the entire recipe and then have them for at least two weeks…if no one else gobbles them up!
A variation I want to try is adding blueberries. I think that would taste delicious. If anyone does, let me know. Or if you have your own ideas on recipe twists, I’m open.
